Forget the Box: Homemade Hamburger Helper Two Ways
This morning I caught a segment on one of the national shows. Their “big news”? Hamburger Helper is making a comeback because times are tough. If that’s not a clear indicator of where we’re headed, I don’t know what is.
Now listen—Hamburger Helper has been around since the 1970s as the “budget meal in a box.” But you don’t actually need the box. With a few pantry staples you can make your own version at home that’s cheaper, healthier, and honestly better tasting.
Today I’m sharing two easy recipes that are staples in our house: Cheeseburger Hamburger Helper and Stroganoff Hamburger Helper. Both are family-friendly, filling, and frugal.
We buy McCormick Gravy mix in bulk at Sam’s club, it’s $5.38 for a twenty ounce container so making this stuff is a bit easier and cheaper then buying the packets.
Homemade Cheeseburger Hamburger Helper
Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 cups beef broth
- 1 cup milk
- 1 ½ cups elbow macaroni (uncooked)
- 2 tbsp ketchup
- 1 tsp mustard
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper
- 1 ½ cups shredded cheddar cheese
Instructions
- Brown the ground beef with the onion in a large skillet. Drain if needed.
- Stir in beef broth, milk, macaroni, ketchup, mustard, and seasonings. Bring to a boil.
- Reduce heat, cover, and simmer about 12 minutes, stirring occasionally, until pasta is cooked.
- Remove from heat and stir in shredded cheese until melted and creamy.
This one is kid-approved and always disappears fast.
Homemade Stroganoff Hamburger Helper
Ingredients
- 1 lb ground beef
- 1 medium onion, diced
- 3 cups of prepared gravy mix
- 1 packet brown gravy mix (or 2 tbsp flour + 2 tbsp butter for scratch version)
- 1 tsp garlic powder
- ½ tsp black pepper
- 1 package (12 oz) egg noodles, cooked and drained
- 1 cup sour cream
- Optional: chopped parsley for garnish
Instructions
- In a large skillet, brown the ground beef with the onion. Drain if needed.
- Stir in beef broth, gravy mix, garlic powder, and pepper. Simmer a few minutes until sauce thickens.
- Fold in the cooked egg noodles.
- Remove from heat and stir in sour cream until creamy.
- Garnish with parsley if you want to dress it up.
This one is comfort food at its best—hearty, tangy, and perfect for chilly evenings.
