5 Easy Meals I Make When I Don’t Feel Like Cooking

Let’s just be honest for a minute…

Some days, I do not feel like cooking.

Not a little tired.
Not “maybe I’ll throw something together.”

👉 I mean… nope.

But takeout adds up fast—and I’m not blowing the grocery budget because I’m tired.

So over time, I’ve built a short list of meals that make life easier on those nights.

Nothing fancy. Just real food that works.


1. Baked Chicken and Rice (Cook Once, Eat Twice)

This is one of my go-to meals.

I make a big pan of baked chicken and rice—and I make plenty.

Because the next night?

👉 That turns into stir fried rice.

One cooking session… two meals handled.


2. Breakfast for Dinner

Scrambled eggs are about as easy as it gets.

Add:

  • toast
  • and a meat—bacon, sausage, ham, corned beef hash… whatever I have on hand

👉 Fast, filling, and nobody complains.


3. Ground Beef Meals (Because I Plan Ahead)

When I brown up hamburger, I always make twice as much.

Half gets used…
👉 Half goes in the freezer.

So on a night I don’t feel like cooking?

I’ve already done the hard part.

That turns into:

  • spaghetti sauce
  • tacos
  • hamburger stroganoff

👉 Future me is always very grateful.


4. Leftovers (On Purpose, Not By Accident)

We don’t “end up” with leftovers…

👉 We plan for them.

When we cook, we make extra so nights like this are already handled.

Because:
👉 Wonder Woman does not live here.


5. Something Simple and Good Enough

Some nights aren’t about making something impressive.

They’re about feeding people and moving on with your evening.

And that’s okay.

Actually—it’s more than okay.

👉 It’s real life.
