✅ Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 cups long-grain white rice
  • 3 cups low-sodium chicken broth
  • 1 cup mixed frozen vegetables
  • 1 medium sized onion chopped finely
  • 2 tsp garlic powder
  • 3 tbsp Worcestershire sauce
  • 1 tsp paprika
  • 2 tbsp melted butter
  • Salt and black pepper to taste

🔪 Prep

Preheat oven to 400°F. Grease a 9×13 baking dish.

👩‍🍳 Instructions

  1. Season the chicken
Pat the chicken dry. Season both sides with salt, pepper, and paprika.
(If the breasts are very large, slice them lengthwise and flatten the thick end — they cook more evenly and stretch farther.)
  2. Mix the base
    In the baking dish, combine:
    • rice
    • chicken broth
    • mixed vegetables
    • diced onions
    • garlic powder
    • Worcestershire
Stir to make sure the rice is evenly distributed.
  3. Nestle the chicken
Place the seasoned chicken breasts right into the rice mixture. Drizzle with melted butter
  4. Bake
Cover tightly with foil and bake at 400°F for 40 minutes.
Remove foil and bake 5–10 more minutes to lightly brown the top.
  5. Rest and serve
Let it sit 5 minutes before fluffing the rice and serving.

🍽 Serving Suggestions

  • Add steamed broccoli or a side salad
  • Top with parsley or green onion
  • Drizzle with a bit of extra soy sauce or hot sauce

💡 Real Frugalist Tip

While you’ve got it in the oven, double up the rice mixture. This can be a planned leftover. Stir fried rice and chicken for dinner anyone?

Leftover Chicken & Rice Stir-Fry

Turn last night’s dinner into a fast new favorite

This is one of my go-to moves after a night of chicken & rice — a quick stir-fry that tastes like a whole new meal. It’s fast, frugal, and uses what you already have on hand. That’s Real Frugalist cooking right there. 🙌

✅ Ingredients

  • 2–3 cups leftover chicken & rice
  • 2 tbsp olive oil (divided)
  • 1 large onion, diced
  • 1 small bag coleslaw mix (shredded cabbage + carrots)
  • 2–3 cloves garlic, minced (or 1 tsp garlic powder)
  • 2–3 tbsp low-sodium soy sauce (adjust to taste)
  • Salt & black pepper to taste
  • Optional: sliced green onions, sesame seeds, sriracha

👩‍🍳 Instructions

1️⃣ Prep the leftovers
Chop leftover chicken into bite-size pieces and set aside. Break up any big clumps in the rice for easier browning.

2️⃣ Stir-fry the veggies
Heat 1 tbsp olive oil in a large frying pan or wok over medium-high heat.
Add diced onion + coleslaw mix and cook 4–6 minutes until softened and lightly browned.
Slide veggies to one side of the pan.

3️⃣ Crisp up the rice
Add the remaining 1 tbsp oil to the empty side of the pan.
Let it heat for a moment, then add rice.
Press it down and let it brown slightly before stirring — this adds flavor.

4️⃣ Add garlic + chicken
Stir in garlic. Add chicken back to the pan.
Mix everything together and stir-fry 3–5 minutes until heated through.

5️⃣ Season + serve
Drizzle soy sauce over the top and stir to coat.
Taste and add more soy sauce, salt, or pepper as needed.

Serve hot!

💡 Add-In Ideas

  • Scramble in 2 eggs for extra protein
  • Toss in peas, corn, or leftover veggies
  • Finish with a squeeze of lemon or spicy sauce

✨ Real Frugalist Tip

Leftovers aren’t a burden — they’re meal #2 waiting to happen. Make enough the first night so the second night is a breeze.
